Vin de noix de la "cour prieur"
Un apéritif naturel
Vers la mi-juin, récolter une quarantaine de noix vertes, encore tendres, juste formées à l'intérieur. Les essuyer, les couper en deux. Les faire macérer avec le brou dans un demi-litre d'alcool de fruit. Utiliser si possible une jatte en terre, avec une grande ouverture. La macération dure 40 jours, à l'abri de la lumière (si besoin, fermer à l'aide de papier aluminium).
Au terme de cette période, filtrer le jus au "chinois", ajouter 1 kg de sucre et 6 l d'un bon vin blanc sec; mélanger puis mettre en bouteille.
On peut déguster tout de suite, mais le breuvage mérite un peu de bouteille et peut se conserver plusieurs années.
